If there’s one thing my husband and I learned during the pandemic, it’s that some foods just aren’t as good when you order them for takeout. Hashbrowns fell into that category—what was supposed to be a comforting and cozy meal ended up being soggy and barely edible.

The Struggle with Takeout Hashbrowns
To avoid this disappointment in the future, I started experimenting with the frozen hashbrowns you can grab at the store. While they definitely cut down on prep time, the results still weren’t ideal. Nothing could beat the experience of sitting down in-person for some good old-fashioned, “served-all-day” diner breakfast.
Until I developed this recipe.
Our Family-Favorite Breakfast
Now, these crispy diced hashbrowns are a family favorite, and I serve them almost every time we have breakfast for dinner. They pair perfectly with all the classics—pancakes, bacon, avocado toast—and with breakfast casseroles like my Cheesy Zucchini and Mushroom Strata.
A Versatile Seasoning Blend
When I want something different, I use the same seasoning blend on other potatoes or veggies. Sweet potato fries, roasted carrots, or even cauliflower all take on that same cozy, diner-inspired flavor. It’s completely versatile and always delicious.

Ingredients
3 Cups Golden potatoes (About 5 medium-large)
2 TBS olive oil
1 tsp seasoning salt
1 tsp paprika
1/2 tsp onion powder
1/4 tsp garlic powder
1 tsp apple cider vinegar
Directions
- Preheat oven to 425 degrees F.
- Dice the potatoes.
- In a medium-large bowl or directly on a sheet pan, mix the potatoes with all ingredients except for the vinegar.
- Roast for 20 minutes. Remove from oven and toss with apple cider vinegar.
- Return to oven and bake for an additional 5-10 minutes until it reaches desired crispiness. They should be a deep golden brown.
Notes
- If you add the apple cider vinegar with the rest of the ingredients they should still turn out tasty, however, they may stick to the pan.
